This was inspired by my Instantpot BBQ Chicken and my Healthy Coleslaw on my website to create a healthy high protein sandwich with both of these recipes. I love making food that can be used in multiple different meals to save time in the kitchen.

Instructions
- Step 1:Cut Bun and Grill or toast lightly
Step 2: Top with BBQ sauce and BBQ Chicken
Step 3: Add coleslaw and sliced jalapeños and enjoy!
Meal Prep Tip
BBQ Chicken and Coleslaw can be stored separately from the bun for meal prep or grab and go lunches on the run.
Substitutions
- Bun - use gluten free buns instead of whole wheat bread buns to make this gluten free
Variations
Additional toppings
- Spicy - add Jalapeños
- Deluxe - add guacamole, crispy onions or Cheese
- Kid friendly - skip the coleslaw and add cheese
Storage
Store the wet ingredients separately from the dry ingredients (buns) in the fridge, and recombine when ready. Good for 2-3 days.
These ingredients don't stand up well to freezing except of the BBQ Chicken which can be stored in the freezer for 30-90 days.
Healthy BBQ Chicken Sandwich

Ingredients
- • 1 whole wheat hamburger bun
- • 115g (about one serving) of Instant Pot BBQ chicken
- • 60g (½ cup) of healthy coleslaw
- • 1 tablespoon of BBQ sauce (or sugar-free BBQ sauce, if preferred)
Instructions
1.Prepare the BBQ Chicken:
*If you haven’t already, cook your chicken in the Instant Pot with your favorite BBQ sauce until it's tender and flavorful. Shred the chicken once it’s cooked.
2.Make the Healthy Coleslaw:
*Mix your coleslaw ingredients together. If you have a specific recipe for your healthy coleslaw, make sure to prepare it ahead of time so it’s ready to go.
3.Assemble the Sandwich:
*Start by toasting the whole wheat hamburger bun lightly if you prefer a bit of crunch.
*Place the shredded BBQ chicken on the bottom half of the bun.
*Add a generous ½ cup of healthy coleslaw on top of the chicken.
*Drizzle with 1 tablespoon of BBQ sauce for added flavor.
4.Top and Serve:
*Place the top half of the bun on your sandwich and press down gently.
*Serve immediately with your favorite side, like baked sweet potato, coleslaw or a fresh salad.
